红薯蔬菜色拉
清脆的绿叶蔬菜和温暖的红薯,外加可选的松脆蔬菜和明亮的甜柠檬酱汁相结合,让这道色拉成为易于享用的美食。可以在午餐、晚餐甚至早餐享用!作为一顿饭自己享用,或作为配菜与他人分享。甚至可能想吃两份。
红薯含有植物雌激素,能够去除体内破坏性的致癌雌激素,这种恶性雌激素会干扰人体的激素功能。
绿叶蔬菜含有珍贵而重要的矿物盐,部分由一组与钠相关的辅助因子组成,诸如微量生物可利用的碘、铬、硫、镁、钙、钾、硅、锰和钼,这是神经递质和神经元至关重要的支持,也是构建电解质的基石。
红薯蔬菜色拉
原料:
3杯各种红薯切丁
1杯切碎的长叶生菜
1杯芝麻菜
1杯小生菠菜
其他可选项:
1杯黄瓜丁
1/3杯切成薄片的红洋葱
2 根 (半杯)切碎的西芹
酱汁:
1/4杯新鲜柠檬汁
2汤匙枫糖浆
1/4 茶匙百里香,新鲜或干燥
1/2茶匙辣椒粉
1/4茶匙芥末粉(mustard powder)
黑胡椒(可选项)
制作:
将切好的红薯放入蒸锅中,盖上盖子蒸8分钟,直到变软并蒸熟,但仍保持形状。放置冷却2-3分钟。
将长叶生菜、芝麻菜和生菠菜放在一个大盘子或色拉碗上,加入红薯、黄瓜、红洋葱和西芹。
将柠檬汁、枫糖浆、百里香、辣椒粉和芥末粉搅拌在一起制作成酱料。如果喜欢,可以加入黑胡椒。
把酱料倒在色拉上,轻轻搅拌均匀。即可享用。
Sweet Potato & Greens Salad
The combination of crisp leafy greens and warm sweet potato with optional crunchy vegetables and a bright sweet lemon dressing makes this a salad that’s easy to enjoy. Serve it up for lunch, dinner, or even breakfast! Enjoy it for yourself as a meal or share it with others as a side. You may want to double the recipe.

Leafy greens hold precious and vital mineral salts, partially composed of a group of cofactors associated with sodium, such as trace bioavailable iodine, chromium, sulfur, magnesium, calcium, potassium, silica, manganese, and molybdenum, which are critical for neurotransmitter and neuron support, and are also the fundamental basis of building electrolytes.
Sweet Potato & Greens Salad
Ingredients:
- 3 cups sweet potatoes of any variety, diced
- 1 cup chopped romaine lettuce
- 1 cup arugula
- 1 cup baby spinach
Other toppings options:
- 1 cup diced cucumber
- 1/3 cup thinly sliced red onion
- 2 stalks /1/2 cup finely diced celery
Dressing:
- 1/4 cup fresh lemon juice
- 2 tbsp maple syrup
- 1/4 tsp thyme, fresh or dried
- 1/2 tsp paprika
- 1/4 tsp mustard powder
- Black pepper, to taste (optional)
Directions:
Place the diced sweet potatoes in a steamer or colander set over a pan of boiling water. Cover with a lid and steam for 8 minutes, until tender and cooked through but still holding their shape. Set aside to cool for 2-3 minutes.
Arrange the romaine, arugula, and spinach on a large serving platter or salad bowl and add the sweet potatoes, cucumber, red onion and celery.
Make the dressing by whisking together the lemon juice, maple syrup, thyme, paprika, and mustard powder. Add black pepper if you wish.
Pour the dressing over the salad and toss gently to coat. Serve immediately.
