Zucchini Noodles with Marinara Sauce
Makes 2 servings
Satisfy a craving for pasta with marinara sauce with this far more healing option. It’s rich in both flavor and nutrients, and you won’t feel heavy after eating it!
¼ cup finely chopped yellow onion or shallot
4 garlic cloves, thinly sliced
2 tablespoons tomato paste
2 pounds fresh plum or cherry tomatoes, roughly chopped, or 2 cups jarred crushed or diced tomatoes
2 teaspoons dried oregano
½ teaspoon red pepper flakes
¼ cup loosely packed basil leaves
2 zucchinis, spiralized
Place a ceramic nonstick pot on medium-high heat. Add the onion or shallot and cook, stirring occasionally, until very soft, 8 to 10 minutes. Add a bit of water if needed to prevent sticking.
Add the garlic and cook, stirring occasionally, until very soft, about 5 minutes. Add the tomato paste and cook for 1 to 2 minutes until the paste begins to caramelize.
Add the tomatoes, dried oregano, and red pepper flakes. Stir until evenly mixed. Reduce the heat, cover, and simmer gently, stirring occasionally, until the tomatoes are soft, 30 to 40 minutes. Remove the lid and cook for a further 10
minutes until the sauce is thick. If using jarred tomatoes, then you can reduce the overall cooking time by half.
Transfer the sauce to a blender or food processor, add the basil leaves, and pulse a few times until you get a chunky sauce. Set aside.
Place a ceramic nonstick frying pan on medium-high heat and add the spiralized zucchini. Sauté while tossing the noodles with tongs until al dente, 2 to 3 minutes.
Divide noodles between two bowls and top with the sauce.
Garnish with a bit of basil and serve immediately.
TIPS
Look for a tomato paste that contains only tomatoes and no other ingredients, such as salt or citric acid.
A good quality jarred fat-free marinara sauce without citric acid, oil, preservatives, natural flavors, or other problematic ingredients can be used when you don’t have time to make your own
