Zucchini Soup

It doesn’t get more simple or satisfying than this rich zucchini soup. Rustic and delicious, this soup is perfect eaten alone or as a side dish alongside any dinner meal.

 

Zucchini is a highly alkaline food that is one of the mildest and easiest vegetables to digest. Zucchini is a great source of vitamin A, C, & B-complex as well as minerals such as iron, zinc, potassium, and manganese. It is high in fiber and low in calories which makes it a great weight loss food and helps to reduce constipation and bloating.

 

Zucchini is rich in poly-phenolic antioxidants which are essential in helping to protect the body from aging, illness, and disease. Zucchini is also a good source of potassium which is an important intra-cellular electrolyte that helps to maintain fluid balance and normalize blood pressure.

 

This soup is the perfect way to utilize and enjoy any extra zucchini in your home or garden.

 

Zucchini Soup

 

Ingredients:

8 zucchini, cubed

2 cloves garlic

1/4C almonds

½ tsp sea salt

1 tsp olive oil

1/8 tsp or one dash each of sage and thyme

 

Instructions:

Steam zucchini and garlic until tender, approximately 5-10 minutes. Strain and place into high speed blender with the remaining ingredients. Blend until well combined. Serve and enjoy!
